Accor’s two Sofitel hotels in Hanoi this week have showcased their combined culinary talents as one of the official caterers to the APEC Summit. Superb menus featuring the best of Vietnamese & French cuisine were prepared for the APEC leaders, through a series of high profile events hosted by the Vietnamese government. The most notable of which were separate State receptions prepared for the US, Chilean, Japanese, Russian and Chinese leaders and then at the culmination of the Summit on Nov 18, the stunning Gala Dinner for 900 APEC participants including all 21 heads of state. 

Accor’s chef consultant Didier Corlou was appointed “Chef des Chefs” for the APEC Gala Dinner, owing to his reputation and wide experience of Vietnamese cuisine. Talented Executive Chef Boris Cuzon of Sofitel Metropole Hanoi together with the head chefs of Sofitel Plaza Hanoi and Sofitel Plaza Saigon, joined forces to create fusion dishes highlighting Vietnamese herbs and spices, whilst respecting the various tastes of the diplomatic world. Chinese President Hu Jintao sampled the shark-fin soup with a dash of Vietnamese “nuoc mam”. Russian President Vladimir Putin savored the salmon made into an upscale “pho” noodle soup. US President George W Bush enjoyed the Nha Trang lobster terrine, vegetable tian and citrus and complimented the banana flambé crème brûlée with passion fruit. 

The catering team of the two Sofitel hotels in Hanoi, headed up by hotel’s Directors of Food & Beverage Carl Gagnon and Ron Pellerine (both Canadian), designed and coordinated an exceptional event as acknowledged by all. Both teams were dedicated to delivering professional service whilst creating an elegant atmosphere ensuring the satisfaction of all guests in the “ Spirit of Accor “.           

During APEC 2006, The Sofitel Metropole welcomed under its centenary roof, the President of Chile, The Prime Minister of Canada and the Vice President of Peru and other high profile politicians and businessmen. The Sofitel Plaza Hanoi was the host for the Singaporean Prime Minister, Hong Kong Governor, Prime Minister of Papua Guinea and many high profile CEO’s from around the globe
